Fics like The Stars Hollow Protection Program

In order to escape some Chuck-based difficulties, Jack uses his archangel powers to zap Castiel and himself back in time to a small town to try to fly under-the-radar for a while in hopes that they won't be found. Because of this, Jack and Castiel end up meeting new people, including one that looks strikingly similar to Sam and goes by the name Dean, and do their best to blend in while the Winchester brothers do their best to sort things out in real-life time. OR Jack and Castiel end up in Stars Hollow and try to get a taste of the normal person and small-town life that would otherwise never be possible for either of them.
