Fics like Let's Go See the Butterflies

"Louis had never worn one. As much as his turning was reminiscent of a wedding, he had never worn a ring that connected him to Lestat. There were obvious reasons for this at the time and Louis was justified in his caution. But then and now are two different things. If they really were going to start anew, they were going to need actual engagement rings. And it needed to be a set for both of them to wear this time. Lestat needed to know that Louis was just as dedicated to their marriage this go-around as he had always been." OR Louis and Lestat go on a museum date and get 'officially' engaged. There's speaches, tears, and lovemaking abound. Part 2 of Louis and Lestat's Love Odyssey and makes slightly more sense if read as a sequel, HOWEVER, it also reads great as a one shot.
